Feed Mom Fresh on Mother’s Day

Marla, the chef for the “Feed Me Fresh” program that provides over 200 meals a day for workers and participants in Mt. Kisco Child Care Center and My Second Home, has provided her recipe for Whole Wheat Soba Noodles as a Mother’s Day gift for families who might want to help make Sunday a no-cooking day for Mom. For “Feed Me Fresh,” Marla uses nothing frozen or out of cans, only ingredients that are in season and available locally, many from local farmers.
Marla’s Whole Wheat Soba Noodles
Serves 4
Dressing
Rice vinegar 1/8 Cup
Soy sauce 1/8 Cup
Grape seed oil ½ Cup
Sesame oil 1 Teaspoon
Lemon juice 1 Teaspoon
Fresh grated ginger ½ Teaspoon
Honey ½ Tablespoon
Cook & Cool
12.8 ounces Whole Wheat Soba Noodles
Then shred:
1 red pepper
1 cucumber
1 carrot
6 radishes
Use black sesame seeds for garnish
Prepare Dressing
Mix shredded vegetables with cooled cooked noodles
Pour dressing on noodles and garnish with black sesame seeds
Mt. Kisco Child Care Center serves about 150 children; My Second Home, about 90 adults, 50 of whom are at the center on any given day. Both are part of an innovative intergenerational program in which “young children play music and garden with seniors, and also learn to enjoy racing to hold doors open for them at the end of the day.” See NewCastleNOW.org article of February 20, 2009, “Not your mother’s old-age home.”
